What are we going to do?

The Jang Table- Beyond the Jar < Ganjang, Doenjang and Gochujang>

Jang is one of the foundations of Korean cuisine — a centuries-old tradition of transforming humble ingredients such as soybeans, salt and grains into flavours that can define an entire cuisine.

From the deep umami of Doenjang, to the complexity of Ganjang, to the sweet, spicy depth of Gochujang, these familiar Korean flavours all carry the story of fermentation, time and craftsmanship. Instead of learning recipes, we will explore three flavour languages and discover how these ingredients can move beyond traditional Korean cooking and find their place in our everyday kitchen.

We will taste them individually, understand their personalities and then experiment with them across an entire meal.

But what makes them so special? And what is the secret behind the flavours we have come to love in Korean food?

In this special workshop, we go behind the jar.

We will explore the world of Jang, discover how Ganjang, Doenjang and Gochujang are made, understand the role of meju, fermentation and salt, and most importantly — taste them side by side and learn and  how to use Korean fermented flavours creatively in everyday foods from banchan to main dishes, from sauces to sweets, from desserts to drinks
